A former Milton Keynes College apprentice has returned to the classroom to inspire learners now starting out on their own careers in professional kitchens.
Lara Parsons, who completed her Commis Chef apprenticeship at Milton Keynes College, delivered a hands-on pasta-making masterclass for first-year apprentices at the college’s Bletchley campus. Lara trained while working at Locanda Gabriella, a family-run Italian restaurant in Olney, and has since progressed to become joint head chef at the business.
The session brought real workplace expertise directly into the college environment. Alongside Gabriella Cocchiarella, owner of Locanda Gabriella, Lara guided five apprentices through the fundamentals of fresh pasta, including dough preparation, shaping techniques and complementary sauces. Learners were then supported as they recreated the dishes themselves.
All of the apprentices attending are in the early stages of their training, having started their programmes in September. One of the group, Ryan, is currently completing his apprenticeship at Locanda Gabriella, which meant he was able to support classmates who were less familiar with pasta-making techniques. As a result, the session encouraged collaboration as well as technical development.
Richie Carter, workplace trainer at Milton Keynes College, said Lara’s return was particularly meaningful. He explained that Lara had faced challenges at the start of her apprenticeship, including learning difficulties and low confidence. However, she went on to thrive both academically and professionally.
Richie said Lara made the most of every opportunity during her time at the college and praised the confidence she showed while leading the masterclass. He also highlighted the quality of food produced by the current apprentices and said discussions focused on how learners could take what they had learned back into their own workplaces.
For Lara, returning to the college marked a full-circle moment. She said that when she began her apprenticeship she lacked confidence but received strong support that helped her grow into her role. Now working full time as a chef, she welcomed the opportunity to share her knowledge with learners who are at the start of their journey.
Gabriella Cocchiarella said Lara was Locanda Gabriella’s first apprentice and has become a key member of the team. She noted that Lara regularly supports the training of new apprentices, including Ryan, and said the workshop demonstrated how far she has progressed. Gabriella also praised the students’ enthusiasm and their ability to apply new skills quickly.
Milton Keynes College continues to work closely with local employers to ensure apprentices gain practical, industry-relevant experience alongside their qualifications. Masterclasses delivered by former learners play a key role in showing apprentices what progression can look like within their chosen sector.
